Alex Cordobes-style cheesecakes have become a real trend for dessert lovers. What sets these cakes apart from the traditional ones is their creamy texture and slightly liquid center, which makes them irresistible. If you are a fan of cheesecakes, we show you how to prepare them in the style of this chef who has revolutionized the classic recipe.
Ingredients:
- 500g cream cheese
- 200g of liquid cream
- 150g sugar
- 4 eggs
- 1 teaspoon vanilla essence
- 1 cookie base (optional)
Preparation:
- Preheat the oven: Set the oven to 180ºC.
- Mix the ingredients: In a large bowl, beat the cream cheese with the sugar until a smooth mixture forms. Add the cream, eggs and vanilla essence. Mix everything together until you obtain a homogeneous dough.
- Pour into the mold: If you decide to use a cookie base, place it in the bottom of a mold. Then, pour the cheese mixture over the base.
- Baking: Place the pan in the oven and bake for 50-60 minutes. The cake should be golden brown on the outside, but with a slightly wobbly center. This is the trick to achieving the medium-runny texture.
- Cool and serve: Let the cake cool to room temperature and refrigerate for at least 2 hours before serving.
Tips: To give it a special touch, you can accompany the cake with a red fruit jam or a layer of caramel.
